Quick Chicken Burrito Bowls
These burrito bowls pack a ton of flavor and take very little time. They take less than 15 minutes to put together and taste great. They're one of my favorite weeknight dinners.

- 2 Tbsp avocado oil divided in half
- 4 chicken thighs sliced, *See Note
- 2 cups cooked, mixed vegetables *See Note
- 2 cups cooked white rice
- 2 cups cooked beans canned black beans also work
- 2 oz cheddar cheese grated
- 2 cups romaine lettuce chopped
"Taco" Seasoning - **See Note
- 1-3 dried chile peppers seeds removed, can also use 1/2 Tbsp red chile powder
- 1 tsp cumin seed
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/8 tsp cayenne more or less to taste
- 1/2 Tbsp dried oregano
Serving
- 4 tortillas the kind you cook yourself are better if you can find them
- avocado sliced
- yogurt or sour cream
- salsa
Place two pans on the stove on medium heat. Pour a tablespoon of avocado oil into each pan. While the pans are heating, place all of the spices into a spice grinder and pulse into a fine powder.
Add the sliced chicken to one pan and the vegetables to the other. Add a Tablespoon of taco seasoning to the chicken and stir to combine. Add the rest of the taco seasoning to the vegetables and stir to combine. Cook for about 5 minutes until everything is hot.
Heat the rice and beans, either in the microwave or on the stove. Cook the tortillas if you're using the uncooked variety.
Place 1/2 cup of rice and 1/2 cup of beans in each bowl. Add cheese, chicken, and vegetables. Top with romaine, salsa, avocado, yogurt, or whatever else you like. Serve with a tortilla.
* I designed this recipe to be used in conjunction with meal prep. If you didn't do the prep or don't want to, no worries. Use a few cups of mixed, chopped vegetables and 4 raw chicken thighs that you cut into strips. Increase the cooking time to 10-15 minutes to make sure everything's cooked properly.
** If you don't have a large spice collection, you can always just use 1 Tbsp of store-bought taco seasoning. Try to buy one that doesn't have a ton of salt in it since the chicken and vegetables are already salted.
