You can also do this with raw chicken and vegetables, you’ll just to cook them longer in order to make sure they’re properly cooked.
Making a Quick Chicken Burrito Bowl
Making a burrito bowl is really simple if you’ve done the relevant meal prep. If you’ve done the work on the weekend, this should take 5-10 minutes when you actually want to serve it.
You start by heating a couple pans on the stove with some oil. While the pans are getting hot, assemble all of your spices for your taco seasoning in a spice grinder.
Then grind it into a fine powder. By now, the pans should be hot. Toss the sliced chicken and vegetables into separate pans and add some seasoning to both pans. Stir to coat everything in taco seasoning and then let it cook on medium for about 5 minutes. Stir occasionally to make sure nothing sticks.
While the chicken and vegetables are getting hot, prepare the rest of your fixins.
I like rice and beans in my quick chicken burrito bowls, so I take some leftover rice and beans, place them into glass containers, and heat them in the microwave until they’re warm. I also slice some romaine, grate some cheese, and halve some avocados.
Once everything’s hot, it’s time to assemble.
I add some rice and beans to a bowl, top with a bit of cheese, and add the chicken and vegetables. Then I add some romaine and some salsa.
But you can put these together however you want. It’s just like going to Chipotle. Add a little extra of the things you like and a little less of the things you don’t. Then serve with a tortilla.
We tend to buy raw tortillas from the store and then cook them ourselves. They have way fewer garbage ingredients and it only takes about a minute. You can usually find these types of tortillas in the refrigerated section of the grocery store.
I personally like to serve it with a runny egg and I usually melt the cheese on top of the tortilla.
This is one of my favorite weeknight meals. I’ll usually make rice, beans, meat, and vegetables on the weekend for meal prep. So it only takes a few minutes and it tastes great.
Quick Chicken Burrito Bowls
Ingredients
- 2 Tbsp avocado oil divided in half
- 4 chicken thighs sliced, *See Note
- 2 cups cooked, mixed vegetables *See Note
- 2 cups cooked white rice
- 2 cups cooked beans canned black beans also work
- 2 oz cheddar cheese grated
- 2 cups romaine lettuce chopped
"Taco" Seasoning – **See Note
- 1-3 dried chile peppers seeds removed, can also use 1/2 Tbsp red chile powder
- 1 tsp cumin seed
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/8 tsp cayenne more or less to taste
- 1/2 Tbsp dried oregano
Serving
- 4 tortillas the kind you cook yourself are better if you can find them
- avocado sliced
- yogurt or sour cream
- salsa
Instructions
- Place two pans on the stove on medium heat. Pour a tablespoon of avocado oil into each pan. While the pans are heating, place all of the spices into a spice grinder and pulse into a fine powder.
- Add the sliced chicken to one pan and the vegetables to the other. Add a Tablespoon of taco seasoning to the chicken and stir to combine. Add the rest of the taco seasoning to the vegetables and stir to combine. Cook for about 5 minutes until everything is hot.
- Heat the rice and beans, either in the microwave or on the stove. Cook the tortillas if you're using the uncooked variety.
- Place 1/2 cup of rice and 1/2 cup of beans in each bowl. Add cheese, chicken, and vegetables. Top with romaine, salsa, avocado, yogurt, or whatever else you like. Serve with a tortilla.
